BLUEBERRY JAM BARS

Prep Time: 1 Hour
Yields: 24 (2-inch Bars)

Comment:
Blueberry season is short and sweet. Make sure to save a jar of homemade blueberry preserves for this delicious jam bar recipe.
 
Ingredients:
¾ cup blueberry preserves
1 cup rolled oats
1½ cups flour
1 cup firmly packed light brown sugar
1 tsp ground cinnamon
½ tsp baking soda
½ cup finely chopped pecans
1 cup cold, unsalted butter, chipped

Method:
Preheat oven to 375°F. Grease a 9” x 13” x 2” baking pan and line with parchment paper. In a large bowl, combine oats, flour, brown sugar, cinnamon, baking soda and pecans. Using a mixer or pastry blender, add butter and blend until crumbs form. Remove 1½ cups of crumb mixture, and set aside. Press remaining crumb mixture into bottom of prepared pan. Bake for 18–20 minutes or until golden. Remove pan from oven and spread preserves evenly over crust. Drop reserved crumb pieces over top of preserves. Bake an additional 18–20 minutes or until top is golden. Remove from oven and allow to cool completely.
